It’s the new year and with it comes a new diet. Not for me (well ok I need to diet too but not this kind of diet necessarily.) but for Bug mainly. Without going into details about specific reasons, our doctor has suggested we trial a gluten free diet for him in addition to his already dairy free diet. If things improve we’ll consider re-introducing gluten and doing a full allergy test, but that’s not something we can do until our savings is rebuilt because it’s freaking expensive.
Here’s the thing. Bug is a picky eater, add to that the fact that he’s 3 and well I’m having a hard time with this. It has taken us a year to get where we are with the dairy free diet. It’s been a bumpy road with ups and downs. We’ve had days when I’ve royally f-ed up and fed him the wrong thing, and then been filled with guilt knowing my baby is suffering because of my mistake. Now I have to take away the go-to’s that I know he’ll eat, or find subs. Neither of which is just easy, have you seen the price of pre-made gluten free bread? If not venture into that section of your grocery store sometime and take a look…and be prepared to have a heart attack.
So…what does this mean for me? More time in the kitchen, I have to do it. I can’t let him suffer if there’s something I can do to fix it. Therefor tonight I’m going to venture to WINCO and their bulk foods section and attempt to make a loaf of gluten free bread. A friend gave me the link to this blog and I’m going to give it a shot. May the patron saint of bread making, gluten free and dairy free baking have mercy on me and make this easy!
Dinners for the rest of the week will be :
Chicken Enchilada Soup (from a mix that’s df and gf)
Dr. Pepper Shredded Beef Tacos w/fresh made pico on corn tortillas
Lasagna – one pan regular for Big Daddy and I (and probably his co-workers) and one pan made with soy cheese and GF pasta for the kids. I may possibly change theirs up and do lasagna roll ups instead I haven’t decided yet. I will also serve a salad with “Sanctuary Dressing” (vegan ranch) from the book “Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes”

Lasagna rolls are easier to freeze.
How did they turn out?
Tonights dinner is supposed to be Lasagna buuut I couldn’t find GF Pasta when I was out shopping. SO they’re having GF Penne with meat sauce instead.
Hoping to bake bread Sunday once I pick up xanthan gum!
The bread turned out pretty good!! I thought my bread pan looked too full so I separated it into two pans and I shouldn’t have. It has a slight corn-bread like taste and consistency but the kids love it so I’m happy!
